I really enjoyed the course. I made the hummus, aubergine dip, crackers and focaccia yesterday (dips were great and crackers but my focaccia not so much - a bit on the heavy side, OK for a first attempt I think). I made salt free versions for my children which went down a treat! Mussels and duck next weekend)

I so enjoyed the day as did Lily....I've the family here to dinner today and we started with the gaspacho which looked very impressive and was really enjoyed by all. As for Lily, well, she is cooking a three course meal for her parents on Friday to welcome her Dad back from a trip away. Inspired indeed! The lamb was amazing.....the biscuits were also a huge success, we must have mice in our house, they disappeared from the biscuit tin so quickly (I don't think it was the cats) We also made the chocolate pudding you showed us. our eldest son, Richard, helped to make them and was very proud of the finished result......we got so much out of your course, I really appreciated all your time saving tips. I just want to say, a huge thank you for everything you have taught me, the bread is a regular staple now the recipe is faultless and has even converted Michael to adopting your version. I hosted a party two weeks ago and did the canapes which were hugely successful and last week your pork dish went down a storm, i even impressed my chef friend, so much so he asked for the recipes for pork and the bread.

.. We both love Langland bay and the surrounding areas. Having been born near the sea at Llanelli, it always pulls me back, but especially to the Gower. I cannot tell you how much I enjoyed the whole day. I have spent the last two days telling everyone, so hopefully your business will be booming.
I have always steered away from Shell fish, but really enjoyed that course and as a result - I WILL TRY a restaurant meal - next time. As for my wife, she was spoilt rotten on Sunday - Pea and Rocket soup - Poached COD and home made cream Sponge.(All by my fair hand - but second division compared to your meals)
You put so much positive energy into the whole day - I would find it difficult for anyone to walk away disappointed.
BUT - I hope Clive has had the Chance to put his feet up . (Us men must stick together)

Today was such fun - Tracy and I really enjoyed ourselves and shall return!! As always your recipes are amazing and I am already looking for suitable guinea pigs!! The company was good too - I can't believe Gloria was there. What a coincidence that I met her in the shop only last week!!

I thoroughly enjoyed my day with you - thankyou very much. I have always wanted to be involved with a professional chef at work and hopefully learn a few tips. You achieved so much with us and to sit down and sample all those gorgeous ideas was heaven. I will look forward to joining you again in one of our visits here and in the meantime I will tell all my friends who like cooking, what they are missing. I have yet to re-create anything we learned on Saturday but have proudly worn my apron! I've recommended the experience to several friends and hope to visit again in the future.

Fran and I had a great day - thoroughly enjoyed - thanks very much - you and Clive (and Rosie) were excellent hosts and it was a pleasure to be in such a beautiful setting. You have given me the encouragement I needed to dust down my pasta machine and start making pasta - my first attempts a few years ago were not very successful - but the ravioli we had on Saturday was delicious so I feel inspired to try again! Andrew now has major brownie points - he booked the course for me and it was probably one of the best presents he has bought me (I usually have to tell him what I want - so it was great that he actually surprised me with something I really loved). Fran and I would definitely be interested to attend another course in the future.

Thank you for a great day, I really enjoyed the intensity of the day combined with the light hearted feeling in the kitchen. Lots of learning and fun for all, I am amazed at how you maintain your level of concentration throughout whilst having to cope with chatter, flip comments and serious questions. I will not now be afraid to attempt pasta soon. Who is this Jamie Oliver anyway!! Finally to sit and enjoy the delicious results of your skilled work with a glass of rather good wine brought the fab day to a delightful end. Clive once again played a magnificent part with Rosie by his side. Thank you both so much for the photographs and I hope to see you again soon.
